  • 4 cloves garlic
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 1/2 cup shredded cheddar cheese
  • Cajun seasoning and spices
  • 2 tbsp olive oil
  • 1 tbsp Cajun seasoning
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • 1/4 cup all-purpose flour
  • 3 cups whole milk
  • Salt to taste
  • Optional: chopped chives for garnish

Instructions

  1. Cook the rigatoni according to package directions until al dente. Drain and set aside.
  2. In a bowl, season cubed chicken with olive oil and spices.
  3. Sauté seasoned chicken in a large skillet until golden brown and cooked through; remove and set aside.
  4. In the same skillet, melt butter, add minced garlic, then whisk in flour to make a roux.
  5. Gradually whisk in milk and chicken broth; bring to a simmer.
  6. Stir in cheeses until melted; season with salt.
  7. Combine pasta and chicken into the sauce; toss to coat evenly.
