  • 4 garlic cloves
  • 1 tbsp fresh ginger
  • 2 tbsp red or yellow curry paste
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 cup beef broth or water
  • Juice of lime
  • 1 cup jasmine rice
  • 4 garlic naan

Instructions

  1. Prepare ingredients: Cut the beef into cubes, slice the onion, mince the garlic, and grate the ginger.
  2. Sear beef: Heat vegetable oil in a heavy-bottomed pot over medium-high heat. Season beef with salt and pepper; sear until browned on all sides. Remove and set aside.
