  • 1 boneless chicken breast
  • 2 carrots, peeled and sliced into sticks
  • 1 cup baby potatoes, sliced into coins
  • 1 cup cooked tricolor rotini pasta
  • 1 tbsp olive oil
  • 1 garlic clove, minced
  • tsp dried parsley
  • tsp paprika
  • Salt & pepper to taste
  • 1 tbsp butter
  • 1 tbsp cream or milk
  • 1 tsp grated parmesan

Instructions

  1. Preheat your oven to 200C (400F).
  2. Toss sliced carrots and baby potatoes in olive oil, salt, pepper, and thyme. Spread on a baking tray and roast for 25-30 minutes.
  3. Season the chicken breast with olive oil, minced garlic, parsley, paprika, salt, and pepper. Cook by baking or pan-searing until it reaches an internal temperature of 74C (165F), approximately 15-20 minutes.
  4. In a pot, melt butter over medium heat. Add cooked rotini pasta along with cream and Parmesan cheese; stir until creamy.
  5. Serve warm on a plate featuring chicken, veggies, and creamy rotini.
