  • 1 ½ pounds mini potatoes (red creamer or similar)
  • 4 cups water
  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • parsley flakes (fresh or dried)

Instructions

  1. Preheat your oven to 385°F (195°C) and line a baking sheet with parchment paper.
  2. Wash the mini potatoes thoroughly under cold water.
  3. In a bowl, combine 4 cups of cold water with 2 tablespoons of lemon juice.
  4. Carve skull faces into each potato and immediately place them in the lemon water bath.
  5. In another bowl, mix olive oil, remaining lemon juice, salt, onion powder, garlic powder, paprika, black pepper, and parsley flakes.
  6. Drain the potatoes from the lemon water and toss them in the seasoning mixture until coated.
  7. Arrange the seasoned potatoes on the baking sheet with carved faces facing up and bake for about 30 minutes or until golden brown.
