  • 1 medium sweet potato, cubed
  • 1 tsp olive oil
  • Salt & pepper to taste
  • 150g (5 oz) lean ground beef
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • Avocado, sliced
  • ½ cup cottage cheese
  • ½ tsp honey (for drizzling)

Instructions

  1. Preheat the oven to 200C (400F). Toss cubed sweet potatoes with olive oil, salt, and pepper. Arrange on a baking sheet and roast for 20-25 minutes.
  2. In a skillet over medium heat, brown the ground beef while breaking it apart. Season with smoked paprika, garlic powder, salt, and pepper.
  3. Assemble the bowl by layering roasted sweet potatoes at the base, followed by cooked beef and avocado slices. Top with cottage cheese.
  4. Drizzle honey over the avocado and cottage cheese, then finish with black pepper.
