  • 1 tbsp vegan butter or coconut oil
  • 1 green apple, halved and de-seeded
  • 1 medium onion (optional), diced
  • 1 carrot, halved
  • 4 medium tomatoes, halved
  • 1 tbsp stock powder
  • 3 cups water
  • Salt and pepper to taste

Instructions

  1. In a saucepan over medium heat, melt the vegan butter or coconut oil. If using onions, add them now and sauté for about 2 minutes until softened.
  2. Add the halved tomatoes and salt; cook until they soften.
  3. Stir in the halved carrots and green apples, then pour in the water.
  4. Simmer until all vegetables are tender. Stir in the stock powder and adjust consistency with more water if needed.
  5. Allow to cool slightly before blending until smooth; strain if desired.
  6. Season with black pepper or red chili flakes to taste and serve hot.
